Salmon Burgers! (Or what happens when I don’t eat my lunch)

After spending the afternoon on the couch coughing in my sleeve, I decided it was time to make a healthy dinner to nourish me back to health.  I had packed some salmon for my lunch this afternoon, but the constant coughing and sneezing had made my stomach a bit iffy and food didn’t look so good.  Coughing is subsiding, and food was sounding better around dinner time, so I grabbed my lunch and morphed it into something yummy!


Salmon Burgers:

4 oz cooked, deskinned, deboned salmon (or from a can, works too)

1 oz 0% Fage Greek Yogurt

1 Tbsp whole wheat bread crumbs

1 Tbsp chopped shallot

Salt and Pepper to taste


Mix all the ingredients together to form a thick salmon mush (kind of like thick tuna salad).  Form into a patty and roll in extra bread crumbs if you wish. You can either bake the patty in a 350 degree oven for about 15 minutes until it goes all brown and crispy on the outside (this is my preferred method) or you could fry it up on the stovetop.  I served this on a whole wheat english muffin with a handful of spinach and a tsp sprinkling of blue cheese.  Satisfying and healthy- good way to end the day!
