I managed to get home from work this afternoon about 45 minutes earlier than usual, so I set about making a yummy dinner. Turns out, this dinner was faster than the ones I normally make on my “speed cooking” nights. Black bean burgers made with green veggies and yummy dips. Fridge to plate to my tummy in under 30 minutes.
Black Bean Burgers (for one)
1/2 cup black beans, drained
1/4 cup chopped onion
1/2 small zucchini, chopped small
3-4 Tbsp whole wheat bread crumbs
Mash the black beans with a potato masher until they are mushy but still have some texture. Meanwhile, sauté the onions, zucchini and garlic in the olive oil until soft and season with salt, pepper and chili powder. Mix the veggie mixture into the mashed beans and add bread crumbs as needed to bind together. Shape into patties and bake in a 350 F oven for about 15 min, or until hot through.
This recipe made two moderate sized burgers which I enjoyed with dipping sides of mashed avocado and spicy mustard. YUM!
